Sweet almond oil is pressed from almond kernels. The cold-pressed grade is delicate and lightly nutty and is used in dressings, over desserts and in baking; the refined grade is paler and more neutral and is used for light cooking. Two distinctions matter when ordering: food grade rather than cosmetic grade, and sweet almond rather than bitter almond oil, which is an entirely different product used as a flavouring.

Mechanically pressed from sweet almond kernels without refining.
Character: Light gold; delicate, sweet, almond aroma.
Refined for a neutral taste and a longer kitchen life.
Character: Pale, clear and mild.
Cold-pressed almond oil is used cold or gently warmed; the refined grade takes ordinary cooking heat. Check the lot specification.
Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
