Refined olive oil is virgin olive oil that has been refined to remove defects in taste and smell and to lower free acidity. It is mild, pale and much less aromatic than extra virgin, and it is the grade most kitchens use when they want olive oil for cooking rather than for taste. Much of what is sold simply as “olive oil” is refined olive oil blended with a proportion of virgin oil to restore some flavour; that blend is a defined product under the Codex standard and should be described accurately.

Refined from virgin olive oil. Low free acidity, little aroma.

Olive oil (refined blended with virgin)

Refined olive oil with virgin olive oil added back, which returns some aroma and colour. A defined grade in the Codex standard.

Cooking with heat

Refined olive oil is the grade normally chosen for frying and roasting, because refining removes the free fatty acids and particles that shorten an oil’s working life. The usable temperature still depends on the lot, so check the specification.

Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.

On the standard: The standard distinguishes refined olive oil from “olive oil” (a blend of refined and virgin olive oil) and from olive pomace oil, which is extracted with solvents from the pomace and is a different product.

HS note: Olive pomace oil is classified separately under 1510.
