Toasted sesame oil is pressed from sesame seeds that have been roasted first, which is what gives it the deep amber colour and the strong, nutty aroma. In Korean, Japanese and Chinese cooking it is used as a seasoning: a few drops stirred in at the end of cooking, into a dressing, or into a dipping sauce. It is not used as a frying medium, both because the aroma is destroyed by prolonged heat and because it would overwhelm the dish. Buyers should not confuse it with light (untoasted) sesame oil, which is a different product.

Pressed from roasted seed and normally only filtered, not refined, so the roasted aroma is kept.
Character: Deep amber to brown; powerful roasted-sesame aroma; rich, nutty taste.
Used off the heat or added at the end. Prolonged heating drives off the roasted aroma that the oil is bought for, so it is not used for deep frying. Where a sesame oil is wanted for cooking, light sesame oil is the correct product.
Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
