Hazelnut oil is pressed from hazelnut kernels, usually roasted beforehand, which gives the oil its characteristic toasted aroma. It is one of the most strongly flavoured nut oils, used in small quantities in vinaigrettes, over green salads and green beans, in pastry and with chocolate desserts. Like other cold-pressed nut oils it is bought in small formats and used quickly.

Mechanically pressed, normally from roasted kernels, without refining.
Character: Golden brown; strong toasted-hazelnut aroma.
Refined for a lighter taste; less common in the trade.
Character: Pale and mild.
A finishing oil. Prolonged heat destroys the roasted aroma, so it is used off the heat or stirred in at the end.
Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
