Macadamia oil is pressed from macadamia kernels. It is milder and rounder than most nut oils — buttery rather than sharply nutty — which makes it usable both as a finishing oil and, in its refined form, for ordinary cooking. It is produced mainly in Australia, South Africa, Kenya and Hawaii, and is a specialty item: volumes are smaller and prices higher than for the commodity oils.

Mechanically pressed without refining.
Character: Light gold; soft, buttery, gently nutty.
Refined for a neutral taste and steadier cooking performance.
Character: Pale and clear, close to neutral.
The refined grade is used for light cooking; the cold-pressed grade is normally kept for cold use and finishing. As always, the lot specification governs.
Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
