Walnut oil is pressed from walnut kernels, often lightly roasted first, which deepens the colour and the taste. It is a finishing oil: used in vinaigrettes, spooned over salads, cheese, pasta or roasted vegetables, and in baking where a walnut note is wanted. It is delicate and does not keep as long as refined cooking oils once opened, so it is normally bought in small formats and turned over quickly.

Pressed mechanically without refining, keeping the aroma of the kernel.
Character: Golden to light brown; distinctly nutty, sometimes toasty.
Refined for a milder taste and a steadier performance in cooking. Less common in the trade.
Character: Pale, clear, mild.
Used cold or added at the end. Heating a cold-pressed nut oil drives off the aroma it is bought for and can turn the taste bitter, so it is not a frying oil.
Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
