Avocado oil is pressed from the pulp of the fruit. The two grades on the market are quite different products. Extra-virgin (cold-pressed) avocado oil is green, thick and tastes of the fruit, and is normally used unheated or added at the end of cooking, where that flavour is the point. Refined avocado oil is pale gold and neutral, and is used as an ordinary cooking oil. Adulteration with cheaper oils has been documented in this trade, so we recommend agreeing analysis on the contract.

Grades and how they are used

Extra virgin (cold-pressed)

Pressed mechanically from the pulp without refining, so the colour, aroma and taste of the fruit remain.

Character: Deep green to emerald, thicker in the mouth, grassy and buttery with a taste of avocado.

  • Drizzling over finished dishes, vegetables and grilled fish
  • Dips, guacamole and cold sauces

Refined

Refined, bleached and deodorised, which removes the colour and most of the flavour.

Character: Pale gold to light yellow, clear, with little smell or taste.

Cooking with heat

The refined grade is the one used for cooking with heat; the extra-virgin grade is normally kept for cold use or added at the end, because heating drives off the aroma that is paid for. Heat tolerance varies with grade, free fatty acid content and batch, so the lot specification is the reference.

Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
