Refined peanut oil is close to neutral; roasted or unrefined grades, sold separately, carry a strong nutty taste. Peanut is a major allergen and must be declared.

Refined peanut oil

Refined, bleached and deodorised. The usual wholesale grade for frying.

Character: Clear, light yellow, faint aroma at most.

Unrefined or roasted peanut oil

Pressed without full refining, sometimes from roasted kernels, keeping the nutty aroma. Used as a flavouring oil rather than a frying medium.

Character: Amber, pronounced roasted-peanut aroma and taste.

  • Dressings where a nutty taste is wanted

Cooking with heat

Refined peanut oil is a common commercial frying oil. Its usable life in a fryer depends on the refining, the filtration regime and how hard it is worked, so fry-life expectations should be set against the lot specification rather than a general figure.

Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
