Canola oil is pressed and extracted from low-erucic-acid rapeseed, then refined, bleached and deodorised. It is one of the standard neutral cooking oils in the trade: pale, thin and almost tasteless, which is why it is used where the oil should not be noticed. It is supplied refined; unrefined (cold-pressed) rapeseed oil is a different product with a pronounced flavour and a deeper colour.

Cooking with heat

Refined canola is widely used for frying. Its heat tolerance depends on the degree of refining, the free fatty acid content and how often the oil has been reused, so the specification for the lot supplied is the reference, not a general figure.
