Safflower oil is pressed from the seeds of safflower, a thistle-like crop grown for both dye and oil. Refined safflower oil is among the palest and most neutral of the common cooking oils, which is why it is used in dressings and mayonnaise where colour and taste must stay clean. Like sunflower, it is sold in two compositions — standard (linoleic) and high-oleic — and the two behave differently in a fryer, so the type belongs on the specification.

Refined, bleached and deodorised; high in linoleic acid.

Character: Very pale, clear, almost tasteless.

Cooking with heat

High-oleic safflower is the type normally chosen when the oil will be heated for longer periods; standard safflower is more often used cold or in baking. Performance depends on type, refining and batch, so check the lot specification.

Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
