The common grade: refined, bleached and deodorised, high in linoleic acid.

Character: Clear, pale yellow, neutral in smell and taste.

Pressed from varieties bred for a high oleic acid content, which makes the oil more stable in prolonged frying and gives it a longer life in the fryer.

Crude (unrefined) sunflower oil

Cooking with heat

Refined sunflower oil is a standard frying oil, and high-oleic types are chosen where the oil is worked hard or reused, because their fatty acid composition makes them more stable. Exactly how a lot performs depends on the type, the refining and the fryer regime, so use the specification for the lot rather than a general figure.

Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
