Beef tallow is rendered beef fat — firm, white and stable at room temperature. It has a long history as a deep-frying fat in commercial kitchens and is used for roasting potatoes, for pastry in some traditions, and increasingly again in restaurants that want the flavour it gives. Grades differ by the part of the carcass the fat comes from and by how thoroughly it is rendered and filtered: the best grades are mild and clean, and lesser ones are more strongly beefy. Food-grade tallow must be specified: tallow is also produced for soap, feed and biodiesel, and that material is not for food use.

Cooking with heat

Tallow is a traditional deep-frying fat and is valued for holding up in a fryer. Its working life depends on the grade, the filtration and the fryer regime rather than a single published figure, so set expectations against the lot specification.

Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
