Coconut oil is solid and white below about 24 °C and clear and liquid above it, which is normal and not a fault: buyers in warm and cool markets receive the same product in different states. Two grades are traded and they are not interchangeable. RBD (refined, bleached, deodorised) coconut oil is made from dried copra and is neutral, so it is used as a cooking and manufacturing fat. Virgin coconut oil is extracted from fresh coconut meat without chemical refining and keeps the smell and taste of coconut, so it is used where that flavour is wanted.

Cooking with heat

RBD coconut oil is the grade used where the fat is heated, because refining removes the components that make virgin oil break down sooner; virgin coconut oil is normally used at gentler heat or where its aroma is the point. Heat tolerance depends on grade and lot, so use the specification supplied.

Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
