Ghee is butterfat with the water and milk solids taken out. Because the milk solids are browned before they are removed, ghee has a nutty, caramelised aroma that plain clarified butter does not. Removing the water and solids also means it keeps without refrigeration in the climates where it is traditionally made, which is why it is sold in tins and jars rather than chilled tubs. It is central to Indian, Pakistani and Middle Eastern cooking, used for frying, for finishing rice and dal, and in sweets.

Cooking with heat

Because the water and most milk solids are removed, ghee behaves differently from butter when heated and is widely used for frying in the cuisines it belongs to. Residual moisture and milk-solid content vary by producer, so rely on the lot specification.

Smoke point is not published here as a single figure. It varies with refinement, free fatty acid content, filtration and how often an oil has been used, so the figure that matters is the one on the specification for the lot supplied.
